When you think of Kinosaki Onsen, what food comes to mind? For many people, it is "matsuba crab" that comes to mind. However, crabs have a set fishing season, and unfortunately they can only be eaten from November to March.
So we opened the first Tajima beef specialty restaurant in Kinosaki Onsen as an in-house restaurant at Koyado En in 2013. Our goal was to create a new Tajima beef brand in Kinosaki Onsen, second only to crab, so that everyone who visits Kinosaki Onsen could enjoy it all year round.
In fact, Tajima beef is the origin of all the Kuroge Wagyu beef found throughout Japan. Cattle farmers from all over the country fell in love with the deliciousness of Tajima beef and bought calves of Tajima beef to bring back to their hometowns, and it spread throughout the country from there. Matsusaka beef, Yonezawa beef, and other brands of Kuroge Wagyu beef all originated from Tajima beef.
The taste of Tajima beef is characterized by its low melting point, finely marbled meat, and tender texture. As you all know, "Kobe beef" is a title given only to high-grade Tajima beef.
The Tajima beef used by Kojuku En is premium Tajima beef that has been specially bred. Of course, all the meat they purchase is special and has been given the title of Kobe Beef. Our inn purchases whole Tajima Gen cows and uses Tajima Gen in all of our meat dishes. The number of Tajima beef cows produced per year is about 7,000, of which about 5,500 are certified as Kobe Beef, and only about 150 Tajima Gen are produced per year, which is only about 2.7% of Kobe Beef, making it a very rare and mythical Tajima beef!
The secret to the deliciousness of Tajimagen is the feed. They use pesticide-free grains and no genetically modified corn. Simply put, it is organic beef. The cows are raised healthy by eating only healthy foods.
The characteristic of this meat is that the fat is very soft and melts at about 12 degrees. The meat is just like bluefin tuna sashimi. The fat is gentle so it doesn't cause heartburn. The meat has a deep flavor and is magical enough to put a smile on anyone's face with just one bite.
Anyone can freely use the Tajima beef restaurant "Irori Dining Mikuni" located inside Koyado En for lunch. Priority is given to guests staying at Koyado En for dinner, but the general public can also use the restaurant if there are vacant seats. However, for dinner only, only those who are elementary school students or older and can order adult dishes are allowed.
